What does Regulation R638 require a kitchen to keep?
R638 (Regulations Governing General Hygiene Requirements for Food Premises, 2018) requires documented hygiene management: temperature control evidence, cleaning schedules, pest control, food handler health and training records, and the conditions of your Certificate of Acceptability.
